Jalapeno Popper Stuffed Chicken Breast {SRC}


Woo Hoo,it's time again for a Secret Recipe Club post!!!  This month, I was lucky to be assigned to Lynsey Lou's!  What a fabulous blog.  She says "The kitchen is definitely the heart of our home.  We spend about 75% of our time there."  That is so true of our house also.  I had no problem picking a recipe, her Jalapeno Popper Stuffed Chicken Breast had me drooling and I had jalapenos in the fridge I had to use.
I cut the jalapenos in half.
 I used a spoon to remove the seeds and the ribs and then coarsely chopped them.  I heated some oil in my pan and cooked the jalapenos until soft, about 5 minutes.  I removed them from the pan.
 In the same pan I heated a little more oil and lightly browned the panko.  I then combined the panko
in a shallow dish with some taco seasoning, parsley, oregano, salt and pepper.   In a separate shallow dish (a pie plate works great) I whisked together one egg and some milk.
In a small bowl, I combined the softened cream cheese, sour cream, jalapenos, and shredded Jack and Cheddar cheeses.
 Using a sharp knife, I cut a pocket into each of the chicken breasts.  I evenly stuffed each piece of chicken with the cream cheese mixture. 
 I dipped each piece of chicken into the egg mixture, then rolled them in the panko mixture.  I placed them on my prepared baking sheet.  Once all the chicken was stuffed and coated, I lightly sprayed each with olive oil then placed them in the preheated oven.  I baked the Jalapeno Popper chicken for about 30 minutes, until cooked through and juices ran clear.  WOW, this was SO yummy!!!  Leftovers the next night were EVEN better. 

Jalapeno Popper Stuffed Chicken Breast

4 Chicken breasts
4 ounces cream cheese, softened
 2 tablespoons sour cream
 1/4 Cup shredded sharp cheddar cheese
1/3 Cup shredded Monterrey Jack cheese
1 tablespoon olive oil, divided
4 Jalapenos seeded and chopped
 1 1/2 Cups Panko bread crumbs
2 teaspoon taco seasoning
1/2 teaspoon dry parsley
 1/4 teaspoon dry oregano
 1/4 teaspoon salt
Freshly ground black pepper
1 Egg
1 tablespoon milk
Non-stick cooking spray

Directions:

Preheat oven to 350.  Line a baking sheet with a silicone baking mat (or spray with non-stick cooking spray) and set aside.

Place 1/2 tablespoon of olive oil in a medium skillet over medium heat and allow to heat.  Place the chopped jalapenos in the skillet and cook until softened, about 5 minutes.  Remove from pan.

Place the remaining olive oil in the skillet over medium heat.  Add the panko and toast until golden brown, about 5 minutes.  Remove from pan. 

Combine the cream cheese, sour cream, jalapenos, and shredded cheeses and stir to combine.  In a separate bowl, whisk together the milk and egg, set aside.  In a shallow dish combine the bread crumbs, taco seasoning, parsley, oregano, salt and pepper and stir to combine. 

Using a sharp knife, cut a pocket into each of the chicken breasts.  Evenly stuff each piece of chicken with the cream cheese mixture.  Dip each piece of chicken into the egg mixture, then roll in the panko mixture.  Place on prepared baking sheet.  Once all the chicken is stuffed and coated, lightly spray with olive oil then place in the preheated oven. 

Bake chicken for 30 minutes, until cooked through and juices run clear.

Happy SRC reveal day! I'm so glad you loved this chicken, it's a favorite in our home. It's been a while since I've made it, and seeing your post reminds me how much we love this chicken. I guess I need to make it again soon!

Oh wow. I'm not a big jalepeno fan, but this sounds really goo. And I do like jalepeno poppers so would probably enjoy this.
