Meyer Lemon Mojito

Okay, I know, when you think of Christmas Cocktails, you really don't usually think of one made with a Meyer Lemon, right?  
Well our Meyer Lemon tree is producing more fruit then I know what to do with and the temperatures are in the 80's, so a mojito sounded PERFECT!!!  I did put it in a Christmas glass!
 I made a mint simple syrup by combining 1 cup of water and 1 cup of sugar and heated it until the sugar was melted.  I removed the pan from the heat and added some mint, this adds just a little more mint flavor to the mojito.
 I allowed the syrup to cool for about one hour, or it can be refrigerated for up to one week.
 It is so easy to make a mojito.  I muddled together some rind of the Meyer lemon with some Meyer lemon juice, simple syrup and mint leaves in a tall glass glass. I used about 1 tablespoon of the mint simple syrup and it was just sweet enough. I transferred it all to glass along with the rest of the Meyer lemon juice and 1/4 cup of white rum (I like to made mine on the weaker side, that way I can have 2). I added a splash club soda along with ice and gave it a quick stir.  Perfect for a hot December day!

Meyer Lemon Mojito

Simple Syrup:
1 cup water
1 cup sugar
Fresh Mint
1 Meyer Lemon, squeezed (reserve the rind & cut up 1/4 of it)
3 mint leaves
1/2 to 1 1/2 Tbsp simple syrup (depending on how sweet you like it)
1/4-1/2 cup rum
Club soda
1/4 to 1/2 cup ice

To make simple syrup, Add equal parts granulated sugar and water to a small saucepan, bring to a boil for 1 to 2 minutes and lower heat to a simmer for 4-5 minutes. Remove from heat and add mint sprigs.  Allow simple syrup to cool completely before using in your drink.

To make mojito, Place 1/4 of the cut up rind, 1/2 of the Meyer lemon juice, simple syrup and mint leaves into a tall glass cup. Using a muddler or small wooden spoon, muddle (or push down on) the mint leaves and Meyer lemon rinds a few times.
Taste and add more simple syrup to taste if needed. Transfer to glass along with the rest of the Meyer lemon juice. Add club soda and/or rum along with ice. Give one quick stir with a spoon or drink stirrer and serve immediately.

Anything with Meyer lemon is perfection...and since you live in Florida, you have to work with the abundance of local produce you have in December. Hope you had wonderful holidays!
