Wow, not sure where the time went yesterday. I started cleaning and before I knew it, it was 4:00. The house looked great, but I was in no mood to make dinner and too tired to go out. Luckily, I had taken some chicken legs out of the freezer in the morning with intentions of making Sticky BBQ Chicken Legs. But I just did not feel like a meal loaded with thick BBQ sauce.
Time to change things up. I decided to marinate the chicken legs in Meyer lemon juice since acidic marinades only take short time. I still have tons of it in the freezer from last years bumper crop. If you don't have Meyer Lemon juice, regular lemon juice will work just fine!
I also had an overabundance of oregano in the garden, perfect. I made a quick marinade of fresh lemon juice, chopped oregano, a little garlic, Meyer lemon olive oil, grated lemon peel, some salt and pepper. Into a zip lock bag it all went for about 30 minutes. Gordy and I walked the dogs while the chicken legs flavored. When we got home I fired up the grill and slathered 2 ears of corn with some Dijon mustard and butter. I wrapped the corn in foil and tossed it on the grill with the lightly drained chicken legs. Dinner was done in 30 minutes, just enough time to have a glass of wine and watch some Olympics, go USA!
Grilled Lemon Oregano Chicken Legs
2 tablespoons fresh lemon juice
2 tablespoons coarsely chopped fresh oregano
2 garlic cloves, pressed
1 tablespoon extra-virgin olive oil
1 1/2 teaspoons coarse kosher salt
2 tablespoons coarsely chopped fresh oregano

pepper, to taste
1 teaspoon finely grated lemon peel
8 chicken drumsticks
1 teaspoon finely grated lemon peel

Whisk first 6 ingredients in small bowl. Season to taste
with freshly ground black pepper. Pour marinade into 1-gallon
resealable plastic bag; add chicken and seal. Turn bag to coat chicken.
Marinate at room temperature 30 minutes or in refrigerator up to 2 days,
turning occasionally.
Prepare barbecue (medium-high heat). Place chicken, with
some marinade still clinging, on grill rack; grill chicken until cooked
through and golden brown on all sides, turning frequently, about 30
minutes. Transfer to plates and serve.

The chicken looks scrumptious! I only have skinless chicken breasts in the house, but I bet the marinade will go well with them too!
