What a gorgeous weekend we had in Florida and I started celebrating summer early. Friday was a perfect day, I worked for a couple of hours and then decided to take the afternoon off since Gordy and I had volunteered to help Rolling Pin with the food for Vine to Wine, a fund raiser for The Kid's Place. I had been dreaming about sitting on the lanai, just chilling with a tall glass of ice tea and a sandwich. But not just a PB&J, for lunch I had a Crab and Avocado Grilled Cheese Sandwich with Old Bay Seasoned Butter. OUT OF THIS WORLD!!!
I got the idea earlier in the week from That's so Michelle. I had leftover crab from my Crab Stuffed Scallops and her Old Bay Seasoned Butter sound so good. I do have to admit, I cut the Old Bay in half. 1-1 sounded a little strong for me. I combined 2 tablespoons butter with 1 tablespoon Old Bay, and buttered one side of two pieces of sourdough bread.
I place one slice of bread, butter side down, in a skillet. I layered one slice of swiss cheese, 1/4 pound of crab and 1/2 avocado thin sliced.
I topped it all with another slice of cheese and a slice of bread, butter side up. I heated my skillet to medium and cooked for about 3 minutes per side. Oh boy, I think this is going to be my new go to lunch.
Crab and Avocado Grilled Cheese Sandwich
2 tablespoons butter, softened
1 tablespoon Old Bay
2 slices sourdough bread
1/2 pound crab, picked through for shells
1/2 large avocado, sliced thin
2 slices Swiss cheese
Mix together softened butter and Old Bay
Spread Old Bay butter on one side each piece of bread.
Place one slice bread in pan, buttered side down. Layer with one slice cheese, crab, avocado and another slice of cheese. Set remaining bread slice on top, butter side up
Cook over medium heat, turning once, until golden brown and cheese is melted, about 6 minutes total.
